Bear Recipes


Hansel King

1 lb. bear meat, cubed
1 large onion, chopped
1 tsp. Tony Chachere's seasoning
1 tsp. salt
1/2 tsp. paprika
1 garlic clove, pressed
2 T. shortening

2 c. plain flour
1 tsp. salt
4 T. shortening

4 c. water
1 tsp. lemon juice
1 bay leaf
1 tsp. Worcestershire
1 tsp. Season-All
1 tsp. sugar
1 can mixed vegetables

1 egg
1/4 tsp. baking powder

For dumplings, mix together flour, salt and baking powder.  Add 4 tablespoons shortening.  Put one egg in measuring cup and add milk to make 3/4 cup.  Roll out very thin and cut 1x2-inch pieces.  Brown meat in shortening.  Drain and put meat in pot with all ingredients except vegetables.  Simmer 2 to 3 hours until tender.  Drop dumplings in boiling stew.  Cover and cook until tender.  Use 1 tablespoon flour and 1/2 cup milk to thicken, if needed.
