Use Dutch oven. Season squirrels with salt, red pepper and garlic salt. Dredge with flour and brown. Remove excess oil and melt one stick margarine

Let simmer until meat is tender. Serve over rice or noodles. (Use homemade biscuits to sop gravy.)

Cut up squirrel. Salt and pepper to taste. Roll in flour. Quick brown in oil in heavy skillet. Put on rack in pressure cooker. Put 1 Cup water in cooker. Make gravy in skillet using crumbs and some of oil. Dribble a little gravy over squirrel on rack. Pressure at 10 or 15 lbs. about 10 to 12 minutes. Serve with gravy and hot biscuits.
